- Ingredients:

- 1 1/3 cup pitted dates (approx. 8 oz.)
- 1 cup boiling water
- 1 1/2 cup flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup shortening
- 1 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 3/4 cup chopped walnuts

- Grease and lightly flour 13x9x2 baking pan.

- Combine dates and boiling water. Let cool to room temperature. Stir
- together flour, baking soda and salt. In a large bowl, beat shortening
- about 30 seconds. Add sugar and vanilla and beat until fluffy, about 2
- minutes. Add eggs one at a time, beating one minutes after each
- addition. Add flour mixture and dates (incl. water) alternately,
- beating after each addition. Stir in nuts. Spread into pan and bake
- for 30 to 35 minutes.
